I hope you’re all enjoying this fabulous Friday, this lovely July, this wonderful Summer! As per usual, summer is passing by faster than I’d like it to and before we know it, it’ll be fall. (Proof: I was pinning Christmas ideas this morning. I’m sorry I can’t help it…I’m addicted to sugar plums and holly!).
Anyway, every September I look back on the summer that just zipped on by and wish I would have ______. There’s always something. “It was too fast and I didn’t get to go on a bike ride.” “I didn’t eat a popsicle!” “I never went to the pool!” Whatever it may be, not a summer passes where I don’t have just a teensy bit of regret for not doing something. And the kicker, it’s always the simplest things…like the examples above. (BTW – I’ve had, like, a million popsicles this summer. Popsicles will not be on the list.)
So, this summer is the exception! Not only have the spouse and I been enjoying our long summer days with BBQ competitions, gardening, and hosting mini-parties on our deck (and eating popsicles), but I’m committed to doing all the summer activities that I deeply enjoy for the next couple of months.

As I’ve already mentioned, we’re heading up to the woods for another adventure in the Rocky Mountain wilderness this weekend. This time, we’re going with our friends who have two little ones – a three year old and a six year old. This impacts the trip because when you’re camping with wee ones you have to make s’mores!
I have a love/hate relationship with s’mores (I know, I must be chemically unbalanced). I love them for the obvious marshmallowy-chocolately-oozy-gooey goodness, but really don’t like the sticky-marshmallow, how-did-I-get-chocolate-on-my-forehead mess that comes along with constructing them. I’m a PIA.
That being said, last summer I created a bite-sized s’more treat that turned out pretty darn fantastic. It’s not ideal for camping (we’ll be doing the traditional burnin’ marshmallow & graham cracker sammie this weekend) but they’re a great treat for home and help you create a camping in your backyard feeling for you and the kiddos.
We are FINALLY going camping! This crazy summer hasn’t given us one weekend to get up into the mountains for more than an afternoon hike. Puh! This weekend we have no plans so we are packing up our gear and going to the woods!
We’ve never taken our sweet gal Simcoe (the mastiff) camping before so I’m excited to see how she’ll do in the mountains (I’m thinking she’ll love it!). We already know Barley hates to camp but he’ll survive (he’s such a house-pug). We’re also meeting a couple of our close friends and their furry children so it’s going to be a dog party!
We’re headed up to Lost Lake in Arapaho National Forest….it’s gorgeous! My spouse plans to fish the whole time and I’ll probably hike around a bit and then sleep in the hammock. The pics below are from last summer’s trip near the same area. I can’t wait to get up there!
