Tasty Tuesday: Rhubarb Punch

Happy Summer!

Today’s Tasty Tuesday just had to be inspired by summertime…and I’ve got the perfect summer drink! This last weekend, I volunteered at the Fort Collins Junior League Garden Tour. It was a wonderful event with beautiful gardens, perfect weather, and the best punch I’ve ever had….Rhubarb Punch.

I have a whole bunch of rhubarb in my backyard and I’ve always wondered what to do with the bitter fruit…this recipe is perfect! A big thanks to the Ft. Collins Jr. League for providing a copy of simple recipe in our event programs!

Enjoy!

Rhubarb Punch:
To Make Concentrate, You Need:

  • 10 cups chopped rhubarb
  • 1.5 cups of sugar
  • 3 (6 oz.) cans of lemonade
  • 9 cups of water

And Action:
Bring ingredients to a boil and simmer until soft and mushy. Strain liquid through sieve or food mill. Discard the leftover mash (or use to make jam, pie, ice cream topping, etc. Uh, yum!). Cool liquid concentrate (or freeze)

To Serve Punch:
Mix concentrate with one 2-liter bottle of lemon-lime soda. Serves 20.

Wanna Kick it Up? Why not serve over ice with a splash of vodka….mmm. Or only use one liter lemon-lime soda and use champagne for the rest! Oooh, I’m gettin’ thirsty!
